The Meaning of these Grapes of Wrath quotes?

who are the "they" that they are refering to?

and what does this quote mean?
Okay, I'm almost positive that the first quote is about the rich/bankers. "They" is most certainly the wealthy.
The next quote is...complicated. After searching for work and nearly starving, the depression-era Joad family is in California. The author is trying to say that when you keep people down, when you starve people who truly want to work, it builds inside of them. Their anger grows within their souls, and soon, you have a group of people who will rise up and defeat the system.
